I always hated coconut as a kid, and then about 5 years ago it suddenly started tasting good! Now, I am hooked on these darn macaroons. 

  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla powder or  1 tsp. extract
  • 1/8 teaspoon salt
  • 1 cups sugar
  • 1 12 ounces flaked coconut


DIRECTIONS:

Preheat oven to 325F. Line two cookie sheets with parchment paper. 

In a large mixing bowl beat egg whites and cream of tartar with electric mixer on high speed until stiff peaks form.

Add a few tablespoons of the sugar and keep beating. Add the sugar slowly until it is all added. Add vanilla and salt and mix until combined.

Fold in coconut.

Using a scoop or a large rounded tablespoon, drop in mounds on prepared cookie sheets.

Place on separate racks in oven. Bake 20 minutes. Transfer to wire rack to cool.

Makes about two dozen cookies.
